So the dish I made on Saturday was rockin! I totally scored *mad* points for it being edible. It was straight up saltless, which wasn't so great. I didn't realize that the dish called for low sodium ingredients so that those with salt sensitive diets could self-salt. Aside from being bland at the start it was good. I have been eating it for left overs for days now!
I can't remember where I left off. Did I tell you that I'm cooking a meal a night (on nights when we're home) so that I grow both confidence and skill in the kitchen? My meal plan is as follows:
This week:
Tonight: Jessica's Turkey Pot Pie topped with Mash, Caesar Salad & bread
Wednesday: White Chicken Chili, Salad, and bread
Thursday: Nothing - Eric has band practice
Friday: Postponed due to work related happy hour
Saturday: Benefit gig - no dinner at home
Sunday: Sweet & Sour Pork, Broccoli-Carrot Stir Fry, and rice
Next Week:
Monday: Herb-Rubbed Leg of Lamb, Green Bean Supreme, Cottage Friend Taters (no school)
Tuesday: Saucy Stuffed Shells, Salad, French Bread
Wednesday: Family dinner at the in-laws
Thursday: Taco Chili, Refried Beans, spanish Rice
Friday: Eric's taking me out to dinner to celebrate the wonders of my cooking

Oh heck yes! YOu don't go from being strictly a cereal maker to a gormet, no recipe readin chef-a-roonie!
